Ever since I had my children and began breastfeeding I have acquired an insatiable desire for cake-y, cookie sweets! I’ve also been fighting the repercussions of these ferocious cravings by choosing healthier options whenever and wherever possible. I love baking and have become semi determined to produce at least 3 healthy, low fat, whole wheat sweets! Today my children and I have attempted a healthy chocolate chip banana bread with fantastic results! I slightly adapted this recipe from a post I saw HERE. There’s no butter, no oil, no white flour, an very little sugar! What’s more? It tastes fantastic and we’ve already gobbled down half of the loaf! So enough talk! Here’s the recipe!!!
Whole Wheat Banana Chocolate Chip Bread:
1 1/2 cups whole wheat flour (slightly rounded, not level)
1/2 teaspoon salt
1 1/2 teaspoon baking powder
2 bananas, smashed
3/4 cup fat free greek yogurt
1/2 cup brown sugar
1 1/2 teaspoon vanilla extract
3/4 to 1 cup sugar free chocolate chips
Preheat oven to 350*
Combine the sugar, egg, yogurt, vanilla, and bananas well.
In a separate bowl combine the wheat flour, salt, and baking powder.
Add the wet to the dry and mix in the chocolate chips.
Pour batter into a greased loaf pan and bake on 350* for about 45 minutes or until a toothpick comes out clean.
You can play with this recipe a bit! Don’t want chocolate? Try walnuts or dries fruit! Substitute stevia or agave for the brown sugar. Play around and see what you like!
